{"id":904,"date":"2017-06-17T16:34:30","date_gmt":"2017-06-17T06:34:30","guid":{"rendered":"https:\/\/monrealescookinginspirations.com\/?p=904"},"modified":"2021-01-30T09:24:48","modified_gmt":"2021-01-29T22:24:48","slug":"crispy-skin-salmon-with-dill-potato-salad","status":"publish","type":"post","link":"https:\/\/monrealescookinginspirations.com\/index.php\/2017\/06\/17\/crispy-skin-salmon-with-dill-potato-salad\/","title":{"rendered":"Crispy skin Salmon with Dill &#038; Potato Salad"},"content":{"rendered":"<p><span style=\"color: #ff00ff;\"><em>This salmon is wonderful, with it&#8217;s crispy skin and lovely lemony sauce, and served with a delightful dill, potato and bean salad.<\/em><\/span><\/p>\n<p><em><span style=\"color: #ff00ff;\">I often serve it at my degustation lunches as it has that wow factor and tastes divine \u2665<\/span><\/em><\/p>\n<p><strong><em><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-714 alignright\" src=\"https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/01\/salmon-potato-stack-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/01\/salmon-potato-stack-225x300.jpg 225w, https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/01\/salmon-potato-stack-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/>Ingredients:<\/em><\/strong><\/p>\n<ul>\n<li>4 salmon fillets, boned<\/li>\n<li>2 tbsp olive oil<\/li>\n<li>20gm butter &#8211; for cooking salmon in<\/li>\n<li>25gms butter for lemon sauce<\/li>\n<li>2 tbsp lemon juice (more if needed)<\/li>\n<\/ul>\n<p><em><strong>Method:<\/strong><\/em><\/p>\n<ol>\n<li>Dry salmon skin, and season both sides.<\/li>\n<li>Heat oil and butter in a hot pan and sear salmon skin side down first to crisp.<\/li>\n<li>Turn over and cook until done to desired level (I like it medium not rare)<\/li>\n<li>Take out of pan to rest on warmed plates.<\/li>\n<li>Add remaining butter and lemon juice and stir around pan juices, add 1 tbsp dill, season to taste, then drizzle over\u00a0salmon.<\/li>\n<\/ol>\n<p><em><strong>To Serve:<\/strong><\/em><\/p>\n<p>After placing cooked salmon on warmed serving plate, using a food presentation ring spoon potato &amp; dill salad into ring and level off, remove ring, and\u00a0repeat with all plates.<\/p>\n<p><strong><em>Dill &amp; Potato Salad<\/em><\/strong><\/p>\n<ul>\n<li>3 Desiree potatoes, cooked and cut into cubes<\/li>\n<li>\u00bc cup whole egg mayonnaise<\/li>\n<li>1 heaped teaspoon of Dijon mustard<\/li>\n<li>2 tbsp chopped fresh dill<\/li>\n<li>\u00bc cup cooked frozen peas<\/li>\n<li>\u00bc cup cooked broad beans, de-shelled and de-podded<\/li>\n<li>2 green shallots sliced thinly<\/li>\n<li>Salt\u00a0&amp; pepper to taste<\/li>\n<\/ul>\n<p>Mix together and chill in refrigerator.<\/p>\n<p>&nbsp;<\/p>\n<p><em><span style=\"color: #ff0000;\">Please leave a comment below or on the Instagram or Facebook post if you like this recipe I love feedback \u2665<\/span><\/em><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This salmon is wonderful, with it&#8217;s crispy skin and lovely lemony sauce, and served with a delightful dill, potato and bean salad.
