cut into pieces (breast halves &amp; maryland)<\/li>\n<li>20gm butter, coarsely chopped<\/li>\n<li>1 small onion, thinly sliced<\/li>\n<li>2 garlic cloves, thinly sliced<\/li>\n<li>4 smoky bacon rashers, 3 coarsely chopped<\/li>\n<li>1 tbsp fresh thyme, extra to serve<\/li>\n<li>150ml dry white wine<\/li>\n<li>150ml chicken stock<\/li>\n<li>100gm frozen peas<\/li>\n<li>\u00bc cup small mint sprigs<\/li>\n<\/ul>\n<p><strong><em>Method:<\/em><\/strong><\/p>\n<ol>\n<li>Preheat oven to 180\u00b0C.\u00a0 Heat half the oil in a casserole over medium heat.<\/li>\n<li>Add chicken pieces and cook, turning occasionally until browned (5-6 minutes) set aside.<\/li>\n<li>Heat remaining oil and butter in casserole, add onion, garlic, chopped bacon and thyme and cook, stirring occasionally until golden (8-10 minutes).<\/li>\n<li>Add wine and stock, b ring to a simmer and season to taste.<\/li>\n<li>Add chicken side up and roast in oven until cooked through (30-35 minutes).<\/li>\n<li>Add pears and return to the oven to warm through (3-4 minutes) then season to taste.<\/li>\n<li>Meanwhile, heat a large frying pan over medium-high heat, add bacon rashers and cook, turning occasionally until crisp (3-4 minutes)<\/li>\n<li>Serve chicken topped with mint, crispy bacon and extra thyme.<\/li>\n<\/ol>\n<p><em><span style=\"color: #ff0000;\">Enjoy!\u00a0 Please leave a comment below\u00a0if you have enjoyed this recipe, or on the Instagram or Facebook post as I love to hear feedback \u2665<\/span><\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ingredients: \u00bc cup olive oil 1 medium size free range organic chicken &#8211;
