{"id":740,"date":"2017-02-02T15:30:19","date_gmt":"2017-02-02T04:30:19","guid":{"rendered":"https:\/\/monrealescookinginspirations.com\/?p=740"},"modified":"2021-01-30T09:27:02","modified_gmt":"2021-01-29T22:27:02","slug":"chicken-pilaf","status":"publish","type":"post","link":"https:\/\/monrealescookinginspirations.com\/index.php\/2017\/02\/02\/chicken-pilaf\/","title":{"rendered":"Chicken Pilaf"},"content":{"rendered":"<p><em><span style=\"color: #ff6600;\">I devised this recipe when one day I stood staring a two chicken breasts I had ready to cook,\u00a0and wondered what the heck I was going to do with them for dinner&#8230;.it&#8217;s absolutely yummy!<\/span><\/em><\/p>\n<p><em><strong><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-741 alignright\" src=\"https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/02\/Chicken-Pilaf-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" srcset=\"https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/02\/Chicken-Pilaf-300x300.jpg 300w, https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/02\/Chicken-Pilaf-150x150.jpg 150w, https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/02\/Chicken-Pilaf-768x768.jpg 768w, https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/02\/Chicken-Pilaf.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>Ingredients:-<\/strong><\/em><\/p>\n<ul>\n<li>2 free range chicken breasts, cut into long pieces<\/li>\n<li>1 large brown onion, sliced<\/li>\n<li>1 green capsicum, sliced into strips<\/li>\n<li>handful fresh beans, chopped into small pieces<\/li>\n<li>handful of chopped butternut pumpkin (optional I don&#8217;t always put this in)<\/li>\n<li>2 cloves garlic, chopped<\/li>\n<li>1 long red chilli, sliced<\/li>\n<li>2 tbsp olive oil<\/li>\n<li>2tsp curry powder<\/li>\n<li>1 litre chicken stock<\/li>\n<li>1 cup Basmati rice<\/li>\n<\/ul>\n<p><em><strong>Method:-<\/strong><\/em><\/p>\n<ol>\n<li>Heat olive oil in a frying pan with deep sides, when soft add chicken pieces and brown on both sides.<\/li>\n<li>Add curry power and toss through.<\/li>\n<li>Add capsicum, beans, pumpkin( if you are including it), garlic and chilli and saute for 2 minutes.<\/li>\n<li>Add chicken stock and bring to boil, reduce heat and let simmer for 15 minutes.<\/li>\n<li>Add rice and stir through.<\/li>\n<li>Simmer, stirring often until rice is cooked, add more stock if mixture becomes dry, as it is meant to have a nice sauce to serve.<\/li>\n<\/ol>\n<p>Serve with fresh parsley as a garnish.\u00a0 Serves 4&#8230;&#8230;&#8230;Enjoy!!!<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I devised this recipe when one day I stood staring a two chicken breasts I had ready to cook,\u00a0and wondered what the heck I was going to do with them for dinner&#8230;.it&#8217;s absolutely yummy!
