{"id":726,"date":"2017-01-29T09:29:09","date_gmt":"2017-01-28T22:29:09","guid":{"rendered":"https:\/\/monrealescookinginspirations.com\/?p=726"},"modified":"2021-01-30T09:27:21","modified_gmt":"2021-01-29T22:27:21","slug":"citrus-syrup-cakes","status":"publish","type":"post","link":"https:\/\/monrealescookinginspirations.com\/index.php\/2017\/01\/29\/citrus-syrup-cakes\/","title":{"rendered":"Citrus Syrup Cakes"},"content":{"rendered":"<p><em><span style=\"color: #ff6600;\">These little citrus syrup cakes are so awesome and packed with flavour you will want to make this recipe over and over again.\u00a0 I once served them to a chef who stayed at my B &amp;B and he asked for the recipe..I was quite chuffed \ud83d\ude42<\/span><\/em><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-727 alignright\" src=\"https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/01\/345-225x300.jpg\" alt=\"\" width=\"262\" height=\"349\" srcset=\"https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/01\/345-225x300.jpg 225w, https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/01\/345-768x1024.jpg 768w, https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/01\/345.jpg 1536w\" sizes=\"auto, (max-width: 262px) 100vw, 262px\" \/><\/p>\n<p><em><strong>Ingredients:-<\/strong><\/em><\/p>\n<ul>\n<li>113g<i>\u00a0<\/i>unsalted butter, softened<\/li>\n<li>113g sugar<\/li>\n<li>2 large eggs<\/li>\n<li>zest of 1 lemon &amp; 1 lime<\/li>\n<li>160g self raising flour<\/li>\n<li>pinch of salt<\/li>\n<li>4 tbsp milk<\/li>\n<\/ul>\n<p><em><strong>Syrup:-<\/strong><\/em><\/p>\n<ul>\n<li>2 tbsp lime juice, plus zest for decoration<\/li>\n<li>2 tbsp lemon juice, plus zest for decoration<\/li>\n<li>\u00bd cup icing sugar<\/li>\n<\/ul>\n<p>Preheat oven to 180\u00b0C\/160\u00b0C fan, and butter two cupcake pans.<\/p>\n<p><em><strong>Method:-<\/strong><\/em><\/p>\n<ol>\n<li>Cream together the butter\u00a0and sugar, add the eggs one at a time and the zest, beating well.<\/li>\n<li>Fold in the flour\u00a0and salt gently, then add the milk.<\/li>\n<li>Spoon into the cupcake pans and cook for 20-25 minutes.<\/li>\n<\/ol>\n<p>While cakes are cooking, prepare the syrup by putting the lime and lemon juices and sugar into a small saucepan and heating gently until the sugar dissolves.<\/p>\n<p>As soon as the little cakes are cooked, take them from the oven and prick\u00a0them several times with a small skewer.<\/p>\n<p>Pour\u00a0the syrup over them evenly,\u00a0making sure it is\u00a0on the edges\u00a0as well as the middle.<\/p>\n<p>Let the cakes cook slightly (\u00bd hour or so ), until all the syrup is absorbed.\u00a0 Don&#8217;t leave them\u00a0for more than an hour\u00a0otherwise they will be difficult to remove.<\/p>\n<p>Turn out onto a wire rack and decorate them with the lemon and lime zest.<\/p>\n<p>Makes about 10-12&#8230;&#8230;&#8230;&#8230;..<span style=\"color: #ff0000;\"><em>Enjoy!
