fresh or thawed frozen<\/li>\n<li>\u00bd cup caster sugar<\/li>\n<li>2 tsp cornflour &#8211; mixed with 2 tsp cold water<\/li>\n<li>4 egg whites<\/li>\n<li>Icing sugar to dust<\/li>\n<\/ul>\n<p><strong><em>Method:-<\/em><\/strong><\/p>\n<ol>\n<li>Brush the base and sides of four 250ml (1 cup) souffl\u00e9 dishes with melted butter and sprinkle with caster sugar, tipping out excess.<\/li>\n<li>Chill in the fridge of 20 minutes.<\/li>\n<li>Process the raspberries in a food processor until smooth, then tip into a small saucepan with half the caster sugar.<\/li>\n<li>Stir over low heat until the sugar has dissolves.<\/li>\n<li>Bring to the boil and stir in the cornflour mixture.<\/li>\n<li>Remove from heat but continue stirring until it is well mixed.<\/li>\n<li>Leave to cool completely<\/li>\n<li>Preheat the oven to 170\u00b0C.<\/li>\n<li>Beat the eg whites with a pinch of salt until soft peaks form.<\/li>\n<li>Gradually add the remaining caster sugar until the mixture is thick and glossy.<\/li>\n<li>Add a third of the egg white to the raspberry puree, mixing in well with a metal spoon, then add the rest of the egg white and gently mix it in.<\/li>\n<li>Spoon into the dishes and smooth the tops.<\/li>\n<li>Bake for 12-15 minutes, until well risen and starting to colour.<\/li>\n<li>Dust with icing sugar and serve immediately.<\/li>\n<li>Serves 4.\u00a0\u00a0 Enjoy!!!<\/li>\n<\/ol>\n<p><span style=\"color: #ff00ff;\"><em><strong>Please leave a comment below so I can see if I&#8217;m making people happy with my recipes \u2764\ufe0f<\/strong><\/em><\/span><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Who doesn&#8217;t love a sweet souffl\u00e9, here\u00a0I\u00a0chose to pile up the egg mixture high, instead of levelling\u00a0it off at the top of the\u00a0dish&#8230;they were especially light and\u00a0high and didn&#8217;t deflate as much this way\u00a0\u2665\u2665\u2665 Ingredients:- 200g raspberries &#8211;
