cut from the cob<\/li>\n<li>\u00bd cup red capsicum &#8211; diced<\/li>\n<li>\u00bd cup sliced shallots (green spring onions)<\/li>\n<li>\u00bc cup fresh coriander &amp; parsley<\/li>\n<li>4 tbsp canola oil<\/li>\n<\/ul>\n<p><em><strong>Serve with:<\/strong><\/em><\/p>\n<ul>\n<li>4 tomatoes &#8211; halved &amp; roasted or grilled<\/li>\n<li>1 bunch of rocket<\/li>\n<li>4 rashers of bacon &#8211; fried until slightly crispy<\/li>\n<li>olive oil for dressing<\/li>\n<\/ul>\n<p><em><strong>Method:<\/strong><\/em><\/p>\n<ol>\n<li>Sift flour, baking powder, salt &amp; paprika into a large bowl, stir in sugar &amp; make a well in the centre.<\/li>\n<li>In a separate bowl, combine eggs &amp; milk.<\/li>\n<li>Gradually add the egg mixture to the dry ingredients &amp; whisk until you have a smooth, stiff batter.<\/li>\n<li>Place corn, capsicum, shallots &amp; herbs in a mixing bowl &amp; add batter to bind them (3\/4-1 cup)<\/li>\n<li>Heat 2 tbsp. of batter per fitter &amp; cook about 4 fritters at a time.<\/li>\n<li>Cook for\u00a0 mins, or until the underside of each fritter is golden.<\/li>\n<li>Turn over &amp; cook fritter on the other side.<\/li>\n<li>Transfer to a plate a&amp; keep warm while cooking the remaining fritters.<\/li>\n<\/ol>\n<p><em><strong>To serve:<\/strong><\/em><\/p>\n<p>Place one fritter on each plate &amp; top with two halves of grilled tomato, a few rocket leaves &amp;
