{"id":1090,"date":"2017-10-10T14:32:33","date_gmt":"2017-10-10T03:32:33","guid":{"rendered":"https:\/\/monrealescookinginspirations.com\/?p=1090"},"modified":"2021-01-30T09:22:36","modified_gmt":"2021-01-29T22:22:36","slug":"sourdough-banana-bread","status":"publish","type":"post","link":"https:\/\/monrealescookinginspirations.com\/index.php\/2017\/10\/10\/sourdough-banana-bread\/","title":{"rendered":"Sourdough Banana bread"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1083 alignright\" src=\"https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/10\/AD84A72A-1432-46C2-B7C5-1898CCA7E122-e1507603459988-225x300.jpeg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/10\/AD84A72A-1432-46C2-B7C5-1898CCA7E122-e1507603459988-225x300.jpeg 225w, https:\/\/monrealescookinginspirations.com\/wp-content\/uploads\/2017\/10\/AD84A72A-1432-46C2-B7C5-1898CCA7E122-e1507603459988-768x1024.jpeg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><em><span style=\"color: #ff0000;\">I just adore banana bread, mind you I have tasted some really good ones in my life and some really dry terrible ones too.\u00a0 The best ones I find are moist, crumbly and not dense, and have walnuts inside and on top&#8230;.yummo \u2665 <\/span><\/em><\/p>\n<p><em><span style=\"color: #ff0000;\">This recipe can also be considered healthy as there is very little sugar (\u00bd cup only) in the whole loaf, and it is also\u00a0made with spelt flour, well known for it health benefits as an ancient grain, and much kinder to our tummies.<\/span><\/em><\/p>\n<p><span style=\"color: #ff0000;\"><em>Here I have added not only a wonderful moist, healthy and delicious banana bread recipe, but I have found another way to use up some of that starter discard we have every time we feed our beloved starters.\u00a0 Along with the other two recipes for pancakes and flatbread, this recipe is wonderful, and much, much better in my opinion than normal banana breads.\u00a0 It will stay moist for a few days if wrapped in foil&#8230;..well if it lasts that long!<\/em><\/span><\/p>\n<p><span style=\"color: #ff0000;\"><em>Try it an\u00a0 let me know I promise you wont be disappointed \u2665\u2665\u2665<\/em><\/span><\/p>\n<p><em><strong>Ingredients:<\/strong><\/em><\/p>\n<ul>\n<li>115gms unsalted butter<\/li>\n<li>\u00bd cup brown sugar &#8211; lightly packed<\/li>\n<li>170gms sourdough starter (or 3\/4 cup)<\/li>\n<li>1 cup spelt flour<\/li>\n<li>1 cup plain flour<\/li>\n<li>3 really ripe bananas &#8211; mashed<\/li>\n<li>1tsp pure vanilla essence<\/li>\n<li>\u00be cup\u00a0walnuts &#8211; chopped<\/li>\n<li>2 tbsp extra virgin olive oil<\/li>\n<li>2tsp honey<\/li>\n<li>2 free range eggs<\/li>\n<li>\u00bdtsp sea salt &#8211; fine<\/li>\n<li>\u00bdtsp baking soda<\/li>\n<li>zest of 1 lemon<\/li>\n<\/ul>\n<p><em><strong>Topping:<\/strong><\/em><\/p>\n<ul>\n<li>In a small bowl mix together 3 tbsp chopped walnuts and 1 tbsp brown sugar.<\/li>\n<\/ul>\n<p><em><strong>Method:<\/strong><\/em><\/p>\n<ol>\n<li>Preheat your oven to 155\u00b0C fan forced (175\u00b0C if not fan forced).<\/li>\n<li>Grease a 23cm x 13cm loaf tin and line the bottom and up two ends with baking paper &#8211;
