Ingredients:
- 400gm can of chickpeas
- 2 tbsp tahini
- 1 clove of garlic, crushed
- ½ tsp salt
- Juice of half a lemon
- 3 tbsp extra virgin olive oil
- Reserved liquid from the chickpea can
Method:
- Drain the chickpeas, reserving the liquid and a few chickpeas for decoration
- Rinse chickpeas in cold water and tip into a food processor
- Add tahini, garlic, salt, lemon juice, olive oil and 3-4 tbsp reserved liquid from the chickpea can.
- Mix until fully combined and smooth and then tip into a serving dish.
- Drizzle with some more extra virgin olive oil and decorate with a few whole chickpeas.
- Sprinkle with smokey paprika and finely chopped parsley.
