Lemon and Poppy Seed friands

These delightful citrus friands are as so light and moreish you can’t stop at one!

Ingredients:

  • 6 egg whites
  • 185g butter, melted
  • 125g almond meal
  • 240g icing sugar mixture
  • 75g plain flour
  • 2 tsp finely grated lemon or orange rind
  • 1 tbsp poppy seeds

Method:

  1. Preheat oven to moderate 190°C or 170°C fan forced.
  2. Grease 12 x ½ cup friand trays.
  3. Place egg whites in a medium bowl and whisk lightly with fork until combined.
  4. Add almond meal, icing sugar and flour.
  5. Using a wooden spoon, stir until just combined. Add grated lemon or orange rind, poppy seeds stir through gently.
  6. Divide mixture among trays.
  7. Bake in oven for 20-25 minutes.
  8. Stand for 5 minutes then turn onto wire rack.
  9. Serve dusted with extra sifted icing sugar (if you wish you can omit but it looks pretty)

Makes 12.  I have made a little flower out of a purple grape to add a wee bit of decoration to the plate.

Passionfruit biscuits

I adore passionfruit and these melt-in-your-mouth shortbreads are divine!

Ingredients:-

  • 185g unsalted butter
  • 1 tsp finely grated lemon
  • ¾ cup icing sugar
  • 3 passionfruit
  • ¾ cup cornflour
  • 1¼ cups self raising flour

Method:

  1. Cream together butter, lemon rind and sifted icing sugar until fluffy.
  2. Add passionfruit pulp, mix well.
  3. Fold in sifted cornflour and self raising flour.
  4. Put mixture piping fitted with fluted tube, and pipe in decorative shapes on to oven tray lined with baking paper.(tip wet oven tray slightly with water to hold baking paper still)  I like to make a figure 8 as it makes nice shapes.
  5.  Bake in oven at 180°C or 160°C fan forced for 12 minutes until lightly golden.
  6. Cool on wire racks.
  7. When cold dip tops in passionfruit icing. (You can omit this if you like them as they are)

Icing:

  • ½ cup pure icing sugar
  • 1 tsp butter
  • 1 passionfruit
  1. Combine sifted icing sugar, softened butter and passionfruit pulp, mix until smooth.  Stir over hot water until glossy.

Makes about 40-50 depending on the size make them.
