Gruyere & asparagus tart

I’m going to share my first recipe, for an easy but simply delicious  tart, filled with tangy gruyere cheese and topped with beautiful green asparagus.   This tart is a winner and my guests always love it  ♥♥♥

  • 2 eggs
  • 180ml cream
  • 1 teaspoon plain flour
  • salt & pepper
  • 80gms gruyere cheese – coarsely grated
  • 2 bunches of asparagus – steamed for 2 minutes.
  • 1 small onion – sliced thinly
  • 20gms butter
  • pastry of your choice (or sour cream pastry)

Method:-

  1. I usually make a sour cream pastry, which is absolutely divine with a savory tart or quiche, but if you are not into making pastry (not as hard a you many think but totally worth it) just use a good brand ready rolled short crust pastry.
  2. Grease a tart tin of your choice, here I use a long one which I find easy to cut into pieces, then place pastry into the tin, being careful not to stretch it, using your thumb to remove extra from the edge.
  3. Place a sheet of baking paper on top and some baking beads or rice, and bake at 180°C for 15 minutes, take baking paper off, and bake for another 5 minutes until pastry is set.
  4. Saute onion in 20gms butter on low heat for 8 mins until softened but not browned.
  5. Place on top of pastry, add grated cheese on top, then steamed asparagus.
  6. Whip eggs, cream, flour, salt and pepper together in a large jug, then pour on top of asparagus
  7. Bake for 20 minutes until golden brown and nicely puffed up.
  8. Serve immediately as the combination of eggs, flour and cheese makes this delightful tart puff up like a souffle.
